Let’s be honest. Zucchini noodles do not taste like pasta! Let’s appreciate them for being zucchini in a slurpable form. This sauce will give you an umami orgasm. It’s just what a limp zoodle needs. Enjoy!
- 2 Zucchini, spiralized
- 2 carrots, spiralized
- 1 cup shredded cabbage (green or purple)
- 1 thinly sliced (julienned) jalapeño
- 1/2 cup Broccoli or other veggies thinly sliced
- 4 gloves garlic
- 1″ piece of fresh ginger (roughly 2 tbs grated)
- 2 tbs Hoisin
- 2 tbs Tamari
- 1 tbs Chili Garlic Sauce (I used this one)
- 1 tbs palm sugar
- Juice of 1 lime
- 1 cup fresh herbs, roughly chopped (e.g., Thai basil, mint)
- 1/3 cup roasted peanuts, crushed in mortar and pestle
- 2 tbs coconut oil
Directions
- To make the sauce: Melt coconut oil in sauce pan over medium heat. Add garlic, ginger and palm sugar until sugar is melted. Then add Hoisin, Tamari, lime, and chili garlic sauce. Cook until slowly simmering and thickened. Cool sauce in refrigerator until cold.
- Toss all veggies (aside from the herbs) in a bowl until mixed.
- Toss cooled sauce with zoodles and veggies. Toss in crushed peanuts and chopped herbs.
